Over the years, fans have seen many powerful characters in the Jujutsu Kaisen. In fact, when it comes to fight scenes, hardly any modern shonen does it better Jujutsu Kaisenwith Gege Akutami giving us a fight to look forward to almost every chapter. In these amazing battles, these incredible characters are very prominent, but sometimes, sometimes, the action requires them to get nervous, for one reason or another.
This is not an uncommon practice in stories, and many times it serves the story very well, even if fans of these particular characters aren't too happy about it. Jujutsu Kaisen has, over the years, unnerved many characters in different ways.

Mai Zenin
Mai Zenin is Maki's sister, and at first fans felt she didn't have much potential. But when we saw Yorozu using a similar technique to her, that is, construction, we knew that Mai actually had an incredible ability up her sleeve that she couldn't fully utilize.
Of course, Mai wasn't nervous in the normal sense. She was never able to fully utilize her ability due to being born as a twin, which is considered a curse. In that respect, Mai was not technically unnerved by the author but by fate itself. But the power was still hers to learn. If the author had allowed her to reach her true levels, then she would surely have been one of the strongest wizards of the current era, and that goes without saying.

Yuta Okkotsu
Yuta Okkotsu is an incredibly powerful wizard. In fact, he is a special class wizard, is one of the only four, and he is truly up there with the very best. After all, Yuta has become nervous on many occasions in Jujutsu Kaisen. He has one of the most incredibly overpowered abilities that fans have seen in the series, which is Copy. Unfortunately, he can only use Copy for 5 minutes, which is a huge nerf.
Also, when he expands his domain, called Authentic Mutual Love, Yuta, despite being able to deal lethal damage to his enemies, cannot choose which abilities he uses. On the plus side, he can use whatever abilities he ends up picking over and over, as long as he keeps picking them. Still, Yuta, a wizard who is said to have the potential to one day reach Gojo's level, has apparently become nervous to keep him from being too overwhelmed.

Yuji Itadori
Yuji Itadori is the protagonist of the series, and although he didn't have obvious talent until much later in the story, we now know that he is actually an individual with the potential to reach Sukuna's level. Yuji is actually very strong and uses soul damaging punches, and those alone should be strong enough to defeat the vast majority of wizards. In fact, even in his fight against Sukuna, his ability became very nervous.
Despite Yuji landing multiple black bolts on Sukuna, the latter's cursed energy levels were maintained, which should clearly have gone down. This implies that Yuji's ability to damage souls was greatly weakened. If that wasn't enough, then Yuji, who is also a user of Blood Manipulation, was revealed to not have perfect control of this ability yet. Had he been allowed to use blood manipulation to the best of his ability, then the battle against Sukuna would have been even easier for him. Additionally, Yuji, who also has access to the Shrine, was given another version of this technique by the author. His ability wasn't as dangerous as Sukun's in Shinjuku, which again felt like another nerf from the writer.

Ryomen Sukuna
The King of Curses, Sukuna himself has become nervous on many occasions. After his fight against Gojo, Sukuna was nervous in many ways. First, he couldn't use the Reverse Cursed Technique properly. At the same time, he couldn't even expand his domain for quite a while as other wizards led a raid against him. Had Sukuna been allowed to go all out, this battle would have been over in minutes.
Thankfully, much later, Sukuna's domain returned to him, and this allowed him to deal lethal damage to his enemies. Still, right up to the end, Sukuna was far from his best and remained nervous until he died. Had Gojo not weakened him to Yuji, Sukuna would have wiped him out in minutes.

Gojo Satoru
Gojo Satoru, the strongest modern wizard, was also nervous in the story on many occasions. Most recently, Gojo was nervous in his fight against Sukuna, where despite being able to refill his burnt out curse technique over and over again, Gojo was shown to be hitting his limit for plot purposes. If that wasn't enough, Gojo was also unable to make the most of Six Eyes, which should give him the ability to look at cursed energy at its most intrinsic level. He couldn't dodge Sukuna's World Splitting Dismantle, which characters like Kashimo and even Maki could dodge.
He was also unable to use Reverse Cursed Technique after being hit by World Splitting Dismantle, despite regaining access to it. No doubt Gojo was seriously nervous in this fight to let the plot move forward.
