Saros has over 15 different main weapons and 4 power weapons that you can unlock as you progress through the different biomes in the game. Weapons are usually found in white, red, and yellow locked containers, and you can even re-roll to possibly acquire a weapon you'd like to use in your current run. Here's some information on how to use each weapon in the game and which biome each one starts appearing in.
Unlocking all weapons is one of the requirements for the entire Arsenal trophy Saros. Players must also defeat 25 enemies with each weapon, and a good way to track these kills is by checking a weapon's percentage in the databank and getting them all close to 20%.

What are the best weapons in Saros?
All guns in Saros are pretty good, with a few exceptions, but you can comfortably complete biomes with all of them, especially as you reach the mid to late game. Even so, there are weapons that I would personally rank higher than others, mainly due to their sheer damage and how easy they are to use.
After putting almost 35 hours into the game, three weapons stood out the most to me. Starting from the bottom is Ricochet hand cannon. This is the second weapon you get in the game, and players come from Return who didn't use the pistols much will be happy to hear that the hand cannons are coming in Saros have received the attention they deserve.
The Ricochet Handcannon can clear out rooms in seconds thanks to its penetrating enemy properties. Simply pressing L2 to Alt-Fire and spam shots will damage multiple enemies at once, making most rooms in each biome easy. The only reason the weapon isn't in my top two is because of how it performs against bosses. Since bosses are single targets, you can't really take full advantage of the weapon.
Coming in at number two is Annihilator shotgun. This is another fun weapon to use, and despite that Spitmaw Blaster from Return be more average, shotgun in Saros work a little differently. The primary fire of the Annihilator Shotgun works like any other shotgun, but the Alt-Fire is where the real destruction is. Pressing L2 turns the gun into a grenade launcher that can tear through an enemy's health bar in one or two shots.
Even in boss fights, if you can consistently land the grenades, you'll see the boss's health bar drop extremely quickly, propelling it into the next phase. While aiming the grenade launcher at smaller flying enemies can be a bit difficult, you can still rely on the primary fire in those situations and not worry too much.
My number one weapon is Repeater crossbow. It's easily one of the least complex weapons to use, and not only that, it does most of the work for you. I know this type of weapon might not excite everyone, but that doesn't change the fact that it feels overwhelming to use. The primary fire crushes enemies, and crossbows with higher skill have faster fire rates.
The main reason the weapon is so good is its Alt-Fire, which allows you to aim anywhere on the terrain or ground and still hit multiple enemies at once. Its projectiles can track, meaning they constantly hunt and damage enemies in a room without you having to worry about where they are. In boss fights, the weapon holds up extremely well, and you can always switch to primary fire while mixing in Power Moves, making most boss fights much less challenging.
