As the prince of all saiyans, Vegeta is one of the most legendary and beloved figures in all Dragon Ball franchise. Due to his brilliant character arc, relatable personality and never-ending quest to push his limits, Vegeta has grown from a Saiyan fighter to a warrior capable of battling gods as one of the strongest characters in Universe 7.
As such, Vegeta has undergone many remarkable transformations during his journey in Dragon Ball franchise, culminating in his impeccable Ultra Ego form. With this form, he has become stronger than ever before and can convincingly defeat some of the other strongest characters in the series, so let's see who these are.

Jiren would be easy to work for Vegeta right now
Universe's strongest 11
In the Tournament of Power, there was no greater threat to Universe 7 as a whole than Jiren the Grey, the strongest warrior in Universe 11, who was rumored to be even more powerful than his Destroyer god, Belmod. Jiren's strength was so terrifying that he managed to trade blows with Mastered Ultra Instinct Goku, and even outlasted him, requiring Goku, Frieza, and Android 17 to team up to defeat him for good.
Although he was far superior to Vegeta in the tournament, he simply would not be able to compete with the Prince if they fought now due to Ultra Ego's overwhelming strength and offensive power. Of course, since the tournament ended, it's highly unlikely that Jiren has sat idle without getting stronger himself, but as far as we know for sure, Ultra Ego Vegeta is much stronger than him.
Moro would be much weaker than Vegeta now
The Planet Eater
The Moro arc introduced one of the most sadistic and powerful villains in the entire franchise who also turned out to be one of its best. Moro's overwhelmed ability allowed him to take the energy of other things and people to enhance his own strength, and was shown to do so on a planetary scale, making him immensely powerful in the process.
His strongest state was realized when he had absorbed Merus and unlocked an Ultra Instinct capable form. Although this and his Planet Moro forms were incredibly powerful, they would definitely be weaker than Ultra Ego Vegeta, as a weaker version of Goku could defeat them. Vegeta, with his Energy of Destruction, could simply just erase the villain.

Cell Max wouldn't put up with much of a fight
A raging monster
In it Superhero movie, fans were introduced to Cell Max, who was a gigantic and destructive beast that sought to destroy everything in his path. Although a far cry from the charismatic and charming Perfect Cell, this version of the villain was infinitely stronger than him, and many ranked him as one of the strongest villains in history.
But despite Gohan's claims of being unsure if Goku or Vegeta could take down the beast, the truth is that they definitely could because Gohan hadn't seen them at their full strength. Due to the current lineup of main characters being more or less equal in strength, Ultra Ego Vegeta would have the same ease in defeating Cell Max as Gohan Beast did.
Orange Piccolo is likely under Ultra Ego's Power
The strongest Namekian
By far, one of the best things to come out of it all Superhero the movie was Orange Piccolo; an incredibly powerful transformation that finally brought the Namekian to the same strength as the other main characters. With this form, Piccolo is once again one of the protagonists of the story and is one of Universe 7's greatest and most powerful protectors.
Although the story has not moved on from Chapter 103, statements from Toyotarou have revealed the current power hierarchy, with the five main characters, Goku, Vegeta, Gohan, Broly, and Piccolo, all at roughly the same level with minor differences. Although not that far off, Ultra Ego Vegeta is likely stronger than Orange Piccolo.

Broly still has a lot to learn about his innate strength
The legendary Super Saiyan
Of every character throughout Dragon Ball franchise, perhaps no one has greater innate strength and potential than Broly, who was able to surpass the strength of Super Saiyan Blue Goku and Vegeta in their first ever serious fight. But the trade off here was the fact that this legendary strength caused Broly to completely lose his mind in the process.
In Chapter 103, Broly finally reigned in his immense rage and learned to control his strength, which in itself brought him to the level of the other main characters in just his Super Saiyan form. Despite this, Broly is still very new to mastering this power, so his refinement requires a lot of work. This is why Ultra Ego Vegeta would likely defeat him, as Gohan Beast could use Broly's inexperience to do so as well.
Ultra Instinct Goku was weaker in the Granolah arc
A controversial choice
When Goku awakened his Ultra Instinct form in the Tournament of Power, the entire power landscape of the series changed, as Divine Techniques finally became part of it, offering a way for characters to push their limits even further. As such, this allowed Goku to rise to become one of the series' most powerful and exceptional warriors.
The choice for him to be weaker than Ultra Ego is admittedly highly controversial, as it is currently unconfirmed to be the case. However, in the Granolah arc, Vegeta, with his incomplete Ultra Ego, fared much better against the arc's titular character, bringing him close to defeat, while Ultra Instinct Goku was dealt with instantly. Although they are all said to be equal right now, a Mastered Ultra Ego Vegeta just might be stronger than Goku.
