I managed to find a Foongus in one of the big ones two-star Hyperspace Wild Zones in Lumiouse City. If you're not sure what the silhouette of the Mushroom Pokemon looks like, check out the images above to get a clearer picture.
The thing about these Hyperspace Wild Zones is that the Pokemon that spawn in them are pretty random, so if you check out all the available zones on the current map and don't see any Foongus, you can always rest on a bench to change the time of day to reset the spawns. Foongus may also appear in one-star or even three-star Wild Zones, but we cannot confirm that.
Once you find a Hyperspace Wild Zone with Foongus, be sure to pick a monk that has a long survey time so you don't have to worry too much about wasting time looking around. And if it helps, we managed to find a group of them on one of the rooftops (however, there is a chance that it will appear in other places in your game).
