Without Saber, Gilgamesh will lose some of his DMG as there will be no common follow up ATK. Mortenax Blade can offer tons of support values while still dealing damage as a sub-DPS. He can even enable a viable team, as his taunt is pretty reliable. If you don't have him, you can replace Blade SP with other supports like Tribbie, Sparkle, Cyrene, Cipher, Sunday, Robin, Silver Wolf, Ruan Mei, and Tingyun.
Although the last slot can be any sustain, none is better than Huohuo. Huohuo can buff the team's ATK and regenerate energy via her Ultimate. This Gilgamesh team comp is very energy-centric, so Huohuo's team-wide energy reset has tremendous value. Still, if you don't have her, you can use other units like Dan Heng PT, Hyacine, Aventurine, Lingsha, and Gallagher.

For a non-Saber Gilgamesh team comp, stack on supporting units to maximize Gilgamesh's DMG. The best options for this are Mortenax Blade + Tribbie + Huohuo. Both Blade SP and Tribbie are excellent buffers that can also deal DMG, while Huohuo stays in her position as a healer that can quickly help the team's energy recovery.
