Goku, Vegeta, Nappa, Raditz and Broly – each Dragon Ball damn know these Saiyans through manga and anime. Considering Freeza annihilated Planet Vegeta, you'd assume there wouldn't be too many Saiyans hiding, but that couldn't be further from the truth if we explored DBZs multiverse. In fact, some of the most powerful Saiyans ever aren't even part of canon history.
Through games like Dragon Ball Heroes and Xenoversecan the franchise go completely wild with new characters, transformations, mergers, reveals and fanservice battles. Thanks to these side quests, Dragon Ball has given birth to overpowered Saiyans who can solo Super Saiyan 4 Goku or Super Saiyan Blue Vegeta without breaking a sweat.
I only focus on Dragon Ball characters introduced in the games. If you have watched Super Dragon Ball Heroesyou will know some of these saiyans, but they are relatively unknown in the grand scheme of things.

Remember how Vegeta and Goku totally battled Future Zamasu and Goku Black? Well, Shallet absolutely destroys them to the point where they aren't even a danger. A fusion between Dragon Ball Legends' protagonist, Shallot, and his brother, Giblet, Shallet is arguably the perfect version of a Saiyan-based traditional fusion, as it consists of two ancestors of the original Super Saiyan God.
Being siblings, Shallot and Giblet are extremely compatible and the perfect match for a Metamoran Fusion Dance. Even beyond their genetics, Shallot and Giblet balance each other well, with the former relying on fighting instinct and the latter on calculated precision. Put Shalet up against someone DBZ or DBS villain and watch as he easily comes out on top.
Due to it being an ultimately lethal fusion, Shallet cannot rank higher than fifth, but he is an impressive fifth.

Putting aside the incurable madness, that is Dragon Ball Heroes, Dragon Ball Fusions is the ultimate fanservice game that lets you create the ultimate fighter by combining characters that were never meant to fuse together. You even fuse 5 characters together to create an abomination so powerful it can only last for a few seconds.
Introduced as DLC, Karoly Black takes the crown for the most insane fusion in the game, even more so than its “good” counterpart Goku and Broly. By using the Metamo Ring, Goku Black and Broly largely ignore the standard requirements for fusion, allowing them to birth a monster that defies Dragon Ballpp internal logic. Broly's bottomless pool of physical ki would destroy most bodies, but Goku Black's divine nature creates the perfect god level that is stable and unstoppable.

A primary villain in one Dragon Ball Heroes arc, but then becomes a good guy.
When Dragon Ball introduced the multiverse and alternate timelines all the way back in Android Saga, paving the way for alternate reality versions of established characters. Super Dragon Ball Heroes section 1 shows Goku from DBGT and DBSshare the screen; it's stupid but really funny. While I mostly avoided including these characters, Xeno Bardock deserves a mention due to him being absurdly more powerful than his canon counterpart.
In his timeline, Xeno Bardock is saved by the Time Breakers before Freeze destroys Planet Vegeta, and the group then proceeds to mind-control the Saiyan with a mask that causes him to cycle dark ki, allowing him to become very powerful, very quickly. Even when he finally breaks free and becomes his own Saiyan again, Xeno Bardock retains all of his strength, and he even manages to achieve the Super Saiyan 4 transformation.
This version of Bardock was formed through battles in the Demon Realm and dimensional rifts; his power is based on survival rather than martial arts discipline and training.

Although it wasn't the first villain to be introduced Super Dragon Ball HeroesCumber is the first to really leave an impression, and he is an absolute beast. Cumber, an ancient pure-blood Saiyan, operates in a state of uncontrollable primal rage that makes Broly seem righteous, and he exudes an evil aura so all-seeing that it can send other Saiyans into a berserk state. In Super Saiyan 3 form, he is basically on the level of a god battle fighter like Jiren or Goku in his mastered Ultra Instinct form.

Okay, wait! I know Fu looks he's from the Demon Realm rather than Planet Vegeta, but he actually is Dragon Ball's ultimate biological fusion, brings together almost all known breeds. Engineered in a lab by Towa and Mira, Fu represents their ultimate flawless creation, a being capable of inheriting and leading the demon race. His DNA makeup is an absurd cocktail of Saiyan, Majin, Namekian and even Freeza bloodlines; heck, he's even part of Dragon Ball due to having Shenron DNA.
Fu also doesn't have any random Saiyan DNA, but he specifically takes from Goku, Vegeta, Turles, and Cumber. Along with the Saiyan's near-infinite growth cap, he incorporates the genetic advantages and strengths of the other races, becoming the most OP character in Dragon Ball history. While his base form is strong enough to take first place, Fu's Dark King state puts him far above powerhouses like Beerus or Jiren.
We haven't even gotten to the Universe Seed and Universe Tree, which essentially allow Fu to absorb the life force of all 12 dimensions of the multiverse. As the Dark King, he has almost complete control over the space-time continuum. There's a reason Fu is the main villain Super Dragon Ball Heroesa spin-off defined by completely broken characters.
