Knock an enemy out of a fatal fall with either Typhoon Kick with Yari or Shoulder Charge from the survival tree. It only counts if the fall kills them.

Disarm and kill an enemy with their own weapon.
Unlock a disarm method, disarm an armed enemy, pick up their weapon and kill them with the same weapon throw. Weakening the enemy first helps.
The horror

Make 20 enemies collapse in fear with Onryo's Howl.
Use Onryo's Howl repeatedly until 20 enemies collapse in fear. This counts cumulatively over the entire game.
Wolf bait
Bronze
Use an empty Sake jar to trigger a wolf kill.
Unlock the wolf summon skills from Wolf Dens, throw an empty sake can at an enemy, and let the wolf death triggered by that lineup finish them off.
Two as one

Complete a successful Standoff or Assassination with a companion.
Perform a successful stop or pair kill while a companion is actively assisting you. This often happens naturally in companion or Wolf Den standoffs.
Brush fire
Bronze
Kill an enemy by catching grass on fire.
Unlock fire arrows, light tall grass, lure an enemy into it and let the burning grass kill them. It must be the grass fire that kills them, not the arrow itself.
Very convincing

Interrogate 10 enemies.
Interrogate enemies ten times. This comes naturally if you keep picking interrogation prompts during fights and bounty encounters.
Charming

Upgrade 10 charms at least once.
Upgrade ten different charms at least once each. Repeating the same charm multiple times does not count.

Fully upgrade Wolf Blade.
Fully upgrade the Wolf Blade in the forge. The final upgrades use late game materials, so it's best to complete this at the end of the story or during cleanup.
Spear fishing

Spear five fish with yari.
Complete Way of the Yari to get the weapon, then spear five fish at fishing spots marked with white circles in the water. The Yari quest gives you one automatically, so you only need a few more afterwards.

Win a charm by playing zeni hajiki.
Play zeni hajiki in a game den until you win a charm reward. You only need one lair, and some lairs are marked as giving a “new charm”.

Play a shamisen song while camping.
Set up camp in the open world next to your horse, open the camp menu and play any shamisen song. Even the default song works.

Collect 10 full cans of Sake.
Pick up 10 full sake cans. You will likely get this naturally when raiding camps and buildings.

Obtain 30 pieces of Vanity Gear.
Collect or buy 30 jewels. This includes things like armor dyes and weapon kits, and most players should get it during general exploration and bounty cleanup.
